Betty Crocker Carrot Cupcakes

Today is my sister Amanda’s birthday and one of her favorite desserts are Carrot Cupcakes. I think it all started with the Carrot Cupcakes from Crumbs. One bite of theirs and we were totally sold on the whole carrot flavored thing. So today I’m baking Amanda carrot cupcakes, from a box! This is probably the moment where everyone gasps because Jessica Levine prides herself upon 2 things: NEVER eating frozen dinners and mix-in-the-box goods. But you know what, I’m turning over a new leaf. Maybe I won’t go as far as eating frozen dinners but I can admit when a box can do it better AND FASTER than I can. So Betty Crocker, show me proud!
