Since it’s nearly Spring, I felt it was time to celebrate with healthy seasonal recipes that are both light on your wallet and on your stomach! Since this is the time of year people tend to eat “healthy” to get beach-ready, I thought this was the perfect opportunity to post the best recipes for the spring & summer seasons. Stay tuned for some fabulously nutritious, yet satisfying dishes!

  1. Go southern …. make my recipe for
    smoky collard greens……
    1lb greens washed
    3 smoked ham hocks
    1lb beef smoked sausage cut into ¾” pieces
    3 medium onions coarsely chopped
    1T cumin
    1T salt
    2T Grapeseed oil
    Chicken stock
    In the pressure cooker add the oil, onion,beef sausage, hocks, cumin….
    Sauté until the onions are translucent and the sausage begins to give up some of its fat
    Add the greens to the pot, no need to stir
    Add 5-6 cups chicken stock
    Cover and pressure cook for 1hr
    Remove the hocks, clean the meat from the bones, add the hock meat back to the pot
    Discard the bones.
    I must say the pot liquor was fab….
